Do mind the velvet rope, for what stands before us is less a dessert than a small architectural emergency, and I intend to discuss it at length.

The base layer presents itself as a pale, glossy expanse of frosting — or ganache, or possibly a substance known only to the baker and his confessor — over which caramel has been drizzled with such vigorous abandon that one suspects the pastry chef was either inspired by Jackson Pollock or simply lost a wager. The chocolate chips scattered throughout sit like a jury of small, dark-robed magistrates, silently judging the proceedings, while the crumbled streusel underfoot crunches with the satisfying menace of gravel beneath a footman’s boot.

But the pièce de résistance, the absolute coup de théâtre, is the wedge of fudge brownie balanced atop the whole affair like a hat no one asked for but everyone secretly admires. Dense, dark, fudgy beyond reason — I half expected it to have its own seating arrangement at dinner. Who, I ask you, decided a fully garnished tart required a brownie on top of it, as though the dessert itself were not already wearing quite enough jewellery? And yet I cannot fault the audacity. The estate’s pastry chef once tried to put a macaron on a trifle and I had him reassigned to the stables for a fortnight; this baker would have given him a run for his money.

On Portion Size: I am genuinely alarmed. This is not a single serving so much as a dare. One does not simply “share” a dessert wearing its own brownie hat — one commits to it, fully, the way one commits to a duel or a third glass of port, and I respect that level of caloric defiance more than I am willing to admit in writing. Ten out of ten currant buns, and a standing ovation for sheer nerve.
